Made from Minced boneless Chicken breast with Mozzarella cheese, boiled Potato, Garlic and Onion Paste and spices,, these crispy fried Chicken snacks are really addictive and so easy to make. Looks great either in your kids lunch box or to be served in the Ramadan Iftar party. These can be stored airtight in the freezer for 1-2 months.

Chicken Lollipop Crispy Chicken Snacks

Ingredients

  • 250g Minced Chicken
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 1 Teaspoon Garlic paste
  • 1 Tablespoon Grated Onion
  • 1/4 Cup | 4 Tablespoons Mozzarella Cheese, shredded
  • 1 Teaspoon Soy Sauce
  • 1 | 140g medium sized Boiled Potato, mashed
  • 2 Tablespoons Chopped Coriander leaves

For Coating

  • 5 Tablespoon All Purpose Flour/Maida
  • 2 Eggs, Mixed with Pinch of Salt
  • 1 Cup Breadcrumbs

Instructions

  • In a bowl add the minced chicken. Add salt, black or white pepper, garlic paste, grated onion, mozzarella cheese, soy sauce and chopped coriander leaves. Mix everything well. Chill the mixture for 30 mins before shaping.
  • Grease your hands with oil and make lemon sized Balls of even size. Do not make too big. Take a Ball in your palm, push a popsicle stick in it and flatten it out to form a round shape. Smoothen the sides and back. Place on a Tray lined with parchment paper or greased tray.
  • Repeat the same for all the balls. Freeze the sticks for 30-60mins or till firm enough for the egg coating. Coat the sticks with all purpose flour first, then dip in egg wash and finally the breadcrumbs. I like to coat all with flour first and keep on the tray to make the process faster.
  • Once done with the breadcrumb coating, transfer them to the same tray and freeze till firm enough for 30-60 mins. You can also fry them straightaway but freezing helps in getting the breadcrumbs stuck to the sticks better. Once frozen, these can be stored airtight in the freezer for 1-2 months. Do not Thaw before frying.
  • Deep fry in Hot oil till Golden on both sides. Do not fry in too much hot oil else the outside will get brown but inside uncooked. Keep heat on medium to low while frying.
  • Serve hot with your favorite Ketchup or Dip.

Notes

Freezing the sticks after coating helps in keeping the breadcrumbs stick to the sticks much better.
