Chicken Chow Mein

Ingredients
  

To Marinate 10-15 mins
  • 200g Boneless Chicken
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon White Pepper
  • 1/2 Teaspoon Brown Sugar
  • 1/4 Teaspoon Baking Soda
  • 1 Tablespoon Light Soy Sauce
  • 1 Teaspoon Sesame Oil
  • 1 Tbsp Cornflour
  • 1 Tablespoon Water
  • 2 tablespoons Vegetable oil to fry the chicken
For Sauce Mix
  • 1 Teaspoon Brown Sugar
  • 1 Teaspoon Chicken powder
  • 1 Tablespoon Light Soy Sauce
  • 2 Teaspoon Dark Soy Sauce
  • 2 Tablespoon Oyster Sauce
  • 1/2 Teaspoon Black pepper
For Chow Mein
  • 2 Tablespoon Vegetable Oil
  • White part of 2 Spring Onions
  • 1 Teaspoon Minced Garlic
  • 1 Teaspoon Chopped Ginger
  • Handful Carrots & Beans julienne
  • Bell pepper Red & Green
  • Cabbage
  • Boiled noodles/spaghetti
  • Prepared sauce mix
  • The Fried Chicken pieces
  • Sesame oil and Green spring onions to Garnish

Method
 

  1. Slice Chicken breasts into thin strips. Add Salt, Pepper, Brown Sugar, Baking Soda, Light Soy Sauce, Sesame Oil, Cornstarch and water. Mix and rest for 10-15 mins. Fry on medium heat till Golden brown. Set aside.
  2. Make a sauce by mixing Brown Sugar, chicken stock powder, light soy sauce, dark soy sauce, oyster sauce and black pepper.
  3. Boil the noodles in hot boiling water mixed with salt. Cook till Al Dente according to your noodle packet instructions. I used Spaghetti boiled for 9 minutes. Drain them and apply oil to prevent sticking to each other.
  4. Saute white part of spring onions, minced garlic and chopped Ginger for few seconds. Add the julienned carrots, beans, bell peppers, cabbage. Saute for 5-6 mins.
  5. Add the boiled noodles, the prepared sauce mix, fried chicken pieces. Toss them well.
  6. Garnish with green spring onions and sesame oil. Add salt and pepper if required. I didn't as the sauces already contain salt.

Notes

You can use either Boneless Chicken Breast or Chicken Thighs for this recipe. The Noodles can be any noodles of your choice, i have used spaghetti as i like the texture of it.
