10 Mathania Red ChilisSoak in hot water for 30mins
FOR GRAVY
3 Tbsp Mustard Oil
1 Black cardamom, 10 peppercorns, 4 Green Cardamom, 4 Cloves
1 Bay leaf
2 medium sized | 170gms Onions sliced
Marinated Mutton
Mathania Chili paste
1 Tbsp Ghee
1 Cup Hot Water
5 garlic cloves crushed
1/2 Tsp Garam masala
Salt to taste
Coriander leaves, chopped
Instructions
Marinate the Mutton with Yogurt and spices. Keep it airtight refrigerated either overnight or atleast 30 mins at room remperature.
Make a chili paste by soaking Mathania Red Chilis in hot water for atleast 30 mins or one hour. They are easily available in Amazon https://amzn.eu/d/ciiNcwE and Kashmiri chilies can be used instead if you are still unable to get them.
Saute whole spices in mustard oil in a pressure cooker. Let them sizzle for a few seconds. Add sliced onions and saute till golden brown. Add the marinated mutton and fry on High Heat for 5-10 Mins. Add ghee. Mathania Chili paste. Saute for 5-10 Mins on low heat.
Add a Cup of Hot water and pressure cook on medium heat for 5-6 Whistles or till fork tender.
Add some more hot water, few crushed garlic and garam masala. Cook on low flame for 5-10 Mins. Garnish with chopped coriander leaves.

Choose bone in mutton pieces for this curry for better flavor.Marinating the meat ahead makes it more tender and juicier, also helps in tenderizing the meat.If Mathania Chilies are not available though they are easily available online, i ordered from Amazon India, the link is https://amzn.eu/d/ciiNcwE.
