Salt and Pepper Chicken

Ingredients
  

To Marinate

  • 300g | 2 Chicken Breast Fillets, cut into strips
  • 1/2 Tsp Salt
  • 1/2 Tsp Black Pepper
  • 2 Tsp Ginger Garlic Paste
  • 1/2 Tsp Sesame Oil

Coating

  • 1/2 Cup Corn Flour

Spice Mix

  • 1/4 Tsp Salt
  • 1/4 Tsp Chinese Five Spices
  • 1/4 Tsp White Pepper
  • 1/4 Tsp Black Pepper, freshly grounded
  • 1/2 Tsp Chicken Stock Powder (optional but recommended i didn't have so didn't add in the video)

Stir Fry

  • 1 Tbsp Sesame Oil
  • 2 Tsp Minced Garlic
  • 2 Tsp Chopped Ginger
  • Spring Onions, Stem part
  • 1 Small Onion, Red Bell Pepper Sliced
  • The Fried Chicken
  • The Salt & Spice Mix
  • 1 Tsp Plain White Vinegar
  • Spring Onions, Green part

Instructions
 

  • Split two medium sized Chicken Breast Fillets in the middle and cut into strips.
  • Add Salt, Black Pepper, Ginger Garlic Paste and Sesame Oil. Mix Well and Cover. Let it rest for 15-20 Mins.
  • Make a Spice Mix by mixing together Salt, Chinese Five Spices, White Pepper and freshly grounded Black Pepper. If you have Chicken Stock Powder then add it for a good flavor. I didn't have it so didn't add it in the video.
  • Coat the Chicken Strips in Corn flour. If you don't like it to have a crispy coating then apply lightly else coat it well. Deep Fry in Hot Oil till Golden brown in two batches so as not to overcrowd. I used Refined Sunflower Oil. Keep them aside to cool.
  • Sauté Minced Garlic, Chopped Ginger in Sesame oil. Add Spring Onions the white or light green stem part.
  •  Add sliced onions and Bell peppers. Fry on High Heat for 2 Mins.
  •  Add the Fried chicken, the Salt & Spice Mix and Vinegar.
  • Garnish with a lot of Spring Onions, Green part. Serve it Hot with plain steamed rice or fried rice. Bon Appetit!

Notes

While frying the chicken pieces if you dont need a thick crispy coating then use only a few tablespoons of cornflour and mix well into the chicken instead of coating the chicken pieces with the flour one by one.
Also ensure the oil is hot enough for a crispy layer but not too hot that the outside gets cooked but inside wont.
