Perfect Besan Barfi, a popular North Indian sweet made with gram flour, sugar, cardamom powder and Pure Cow Ghee. Try out this easy recipe for this Diwali! Made in one pan with no sugar syrup, this recipe is quite easy to make and gets ready within 30 minutes.

Besan Barfi Recipe
Ingredients
- 180g | 1 1/2 Cup Besan/Gram Flour
- 1/2 Cup | 108g Pure Cow Ghee
- 4 Tbsp | 45g Suji/Semolina
- Yellow Orange Food color
- 1/2 Cup | 100g Granulated Sugar, powdered
- 1/2 Tsp Cardamom powder
- Pistachios or any nuts to garnish
Instructions
- Its important to measure the ingredients for perfect result always. It not only saves your time but also ensures a perfect texture. Weigh the sugar and grind it into fine powder. Using powdered sugar saves the extra step of making a sugar syrup.
- Measure the Ghee, Besan and Suji using a weighing scale. If you dont have a weighing scale, the consistency can get tricky as we might put either too less or more in the measuring cup. A weighing scale does not cost much and is a great way to save your time.
- Heat Ghee in a thick bottom or non stick pan. Add the Besan, mix well. Add Suji. Roast on low heat stirring continuously.
- After 15-20 mins of roasting on lowest heat, the Besan starts releasing ghee.
- Switch off the heat and Add the food color.
- Add the powdered sugar, mix well. Switch on the heat, Add 2 Teaspoons of Ghee. Keep stirring it on low heat for 10 mins till the sugar melts and starts releasing from the pan.
- Once the mixture starts releasing from pan, switch off the heat. Let it cool down in the pan mixing it as it cools down for 15 20 mins.
- Transfer the mixture onto a greased or parchment paper lined tray. I used a tray lined with parchment paper and used an aluminum foil wrap to make the area small for thicker barfis. I placed a bowl next to it to prevent spreading.
- Add the chopped pistachios or nuts. Let it set either at room temperature or refrigerate it for 10-15 mins or till firm. Once semi firm, apply the silver vark, optional. Make cuttings else it gets hard later.
- This Recipe makes 12 Standard Sized Barfis depending on your preferred thickness.
