Gulab jamunย (Rose water berry or Rose berry) is a sweet confectionery or dessert, originating inย Persiaย and then later introduced toย India. It isย traditionallyย made from milk solids(mawa/khoya)ย which is milk reduced to the consistency of a soft dough.ย This Khoya is then kneaded with all purpose flour and small even balls of this dough are then deep-fried in oil or ghee at a low temperature. These Golden balls areย then soaked in a lightย sugar syrupย flavored with greenย cardamom,ย rose waterย andย saffron.

This Gulab Jamun Recipe is made using full cream milk powder, plain flour, and baking powder. Easy to make using easily available ingredients at home, this Gulab Jamun Recipe is a fail proof recipe that can be made within 30 minutes. It is a perfect sweet for Diwali.

Gulab Jamun can be made either with Khoya or with milk powder. Making Khoya at home is a tedious process but tastes like heaven and also guarantees crack free balls . Do Check out my Gulab Jamun Recipe using Homemade Khoya

Gulab Jamun Recipe

Ingredients

FOR DOUGH

  • 1 Cup | 115g Milk powder (measure in gms recommended)
  • 1/2 Tsp Baking powder
  • 2 Tbsp All Purpose Flour/Maida
  • 1/4 Cup | 62g plus 1 Tbsp Full fat Milk, room temp
  • 1 Tbsp Ghee

3 Cups of Ghee or Oil to Fry (I used 2 Cups Ghee and 1 Cup Oil)

FOR SUGAR SYRUP

  • 2 Cups | 400g Sugar
  • 2 Cups Water
  • 3 Cardamom pods, crushedย 
  • 8-9 Saffron strands, brokenย 
  • Few drops of Rose water essenceย 

Instructions

  • For best results,ย weigh the milk powder. We do tend to put more or less in our measuring cup and so the texture gets affected. I weighed the milk too 62g plus i added a Tablespoon more to the Cup. I didn't have to add any extra milk.
  • Sift together the Milk powder, All purpose flour and baking powder. Sifting really helps to make smooth crack free balls. Do not skip. After Sifting, mix it thoroughly so that the baking powder can get distributed evenly.
  • Mix the Milk. Add all at once and mix with a spoon or a spatula. Do not knead with fingers. It should be a Sticky dough. Cover airtight and Allow to rest at least 10-15 mins.
  • After 15 Mins, Add ghee. Mix well. Make smooth balls by greasing your hands with ghee or oil. I used a measuring Tablespoon to scoop out equal quantities. Makes around 10-11 balls. Cover with a kitchen towel to avoidย them drying out. Fry them immediately in hot oil or ghee.
  • For Sugar Syrup, Mix Sugar and Water in a pot. Heat it till the Sugar dissolves and bring to a boil. Once boils, add cardamom pods and saffron strands. Simmer it on low heat for another 5-6 mins. Do not wait for any strong consistency to form. Add the rose water essence at the end and keep covered in a warm place.

Notes

Tip: Always make a sticky dough and let it rest for atleast 15-20 Mins. If you get cracks while rolling the balls, stop and add some milk to the dough and then again make balls.
Oil or Ghee should not be very hot else the balls gets brown faster and remains uncooked inside.
If the Jamuns dont absorb the sugar syrup, try bring the syrup to a boil and then cover it with the balls for sometime.
