Chicken Breast in Creamy Garlic Mushroom Sauce

Ingredients
  

For Chicken

  • 2 small | 300g Chicken Breasts fillets
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper
  • 1 Tsp Garlic powder
  • 1 Tsp Onion powder
  • 1 Tsp Olive oil to pan fry
  • 1 Tbsp Butter to pan fry

For Mushroom Sauce

  • 2 Tbsp Unsalted Butter
  • 1/2 Cup Onions, finely chopped
  • 250g Button Mushrooms, thickly sliced
  • 2 Tsp Minced Garlic
  • 1 tsp Lemon Juice
  • Salt to taste
  • 1 Cup Chicken Stock
  • 1/2 Cup Heavy Cream
  • 2-3 Tbsp Parmesan Cheese, grated
  • 1/4 Tsp Oregano & Thyme
  • Black Pepper

Instructions
 

  • Take 2 Chicken breast fillets and slice in the middle to split each into two halves.

  • Apply Salt, Pepper, Garlic and Onion powder on both sides. Rub it well.

  • Pan Fry the fillets in Butter and Olive oil till golden brown on first side for 5 mins. Then flip over and cook the other side for 7-8 mins or till cooked through. Keep them aside.

  • In same pan, add some more butter and saute chopped onions till translucent for a minute. Then add thickly sliced mushrooms. Saute till golden brown on both sides.

  • Add minced garlic and saute for 30 secs on low heat. Add Lemon juice or plain vinegar.

  • Add salt and Chicken Stock. Let it simmer for 6-7 mins on low heat.

  • Add the Heavy Cream on Low Heat. Let it simmer for 5 mins.

  • Add grated Parmesan Cheese, dried Oregano and Thyme and Black Pepper

  • Add the Fried Chicken Fillets into the sauce and soak them.

  • Garnish with chopped Parsley and Spring onions.

  • Best Served with creamy mashed potatoes. Bon Appétit!
