Method
- Sift together the Flour, Baking powder, Soda, Salt in a Bowl. Mix well.
- In a Separate bowl, add the Egg, Vanilla Essence, melted Butter and milk. Whisk well and add the wet Ingredients to the dry ingredients to get a Thick batter. Do not over mix, few lumps are fine. If too runny the pancakes will spread, won't be fluffy. Let the batter rest for 5-10 mins to get a good rise and texture.
- Heat a nonstick pan or cast iron pan over low-medium heat and Lightly grease the pan with a small amount of butter. Pour 1/3cup of batter onto the pan
- When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
- Serve it Warm with honey, maple syrup, berries or enjoy plain!

Ensure that the batter is not too runny nor too thick to get fluffy thick pancakes.
