Fluffy Pancakes Recipe

Ingredients
  

  • 1 Cup | 125g All-purpose flour
  • 2 Teaspoon Baking powder
  • 1/8 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 2 Tablespoon melted Butter/Oil
  • 2 Tablespoon Fine/Caster Sugar
  • 1 large Egg
  • 1 Teaspoon Vanilla Essence
  • 1/2 Cup | 118g Milk, room temp

Method
 

  1. Sift together the Flour, Baking powder, Soda, Salt in a Bowl. Mix well.
  2. In a Separate bowl, add the Egg, Vanilla Essence, melted Butter and milk. Whisk well and add the wet Ingredients to the dry ingredients to get a Thick batter. Do not over mix, few lumps are fine. If too runny the pancakes will spread,  won't be fluffy. Let the batter rest for 5-10 mins to get a good rise and texture.
  3. Heat a nonstick pan or cast iron pan over low-medium heat and Lightly grease the pan with a small amount of butter. Pour 1/3cup of batter onto the pan
  4. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
  5. Serve it Warm with honey, maple syrup, berries or enjoy plain!

Ensure that the batter is not too runny nor too thick to get fluffy thick pancakes.
