Dates and Dry Fruit Roll

Naturally sweetened with Dates and enriched with nutrients from nuts, these healthy Date rolls make a great pre-workout snack for instant energy or to be served in the Ramadan Iftar Party to break the day long fast. Easy to make in less than 30 minutes, these healthy snacks also stays good for 2-3 months refrigerated in an airtight container. 

Ingredients

  • 250g Mejdool Dates, 16 dates pitted & crushed
  • 40g | 1/4 Cup Almonds
  • 40g | 1/4 Cup Cashews
  • 25g | 1/4 Cup Pistachios
  • 10g | 1 1/2 Tablespoon White Sesame( or Poppy) seeds
  • 1 Tablespoon Ghee
  • 1/4 Teaspoon Cardamom powder

Instructions

  • Wash the Dates and pat Dry completely. Deseed, chop and blend in a blender in few pulses till bit smooth, not too much paste or chunky though.
  • Dry Roast all the chopped Nuts in a pan. Dry roast the sesame seeds for 1-2 mins or till slightly Golden Brown. Set aside.
  • Add Ghee and cook the mashed dates till it gets soft on low heat. It takes only few minutes. Keep stirring mashing the mixture.
  • Once it gets dough like, add the roasted nuts and a Tablespoon of the toasted sesame seeds. Add cardamom powder. Mix well, transfer to a butter paper.
  • Let it cool down a bit but not too much. Once slightly warm, roll into a log. Place few pistas & sesame seeds & roll it to stick to the outer surface. Refrigerate for 1-2 hours or till firm enough. Slice and store in an airtight container.

Notes

Try to use Mejdool Dates of good quality if available for this recipe. The taste of this snack depends on the taste of dates. We want Chewy and Soft dates for this recipe. If your dates are hard, soak them in water for sometime.
You can also roll it into a bar and cut it into squares like date Barfi. It can be eaten as energy bites or healthy snacks.
