If you’re looking for a delicious and easy dessert, then you should try Victoria Sponge Cake! This cake is perfect for any occasion, and is made with simple ingredients that you probably have on hand. Plus, the strawberry jam filling combined with whipped cream is delicious and unique. If you’re a fan of classic sponge cake, then you’ll love making this cake!

No wonder it was Queen Victoria’s favorite who had it with her afternoon tea everyday! An evergreen Beautiful British Classic that steals my heart everytime. It was initially baked shaped as a loaf and cut into little finger sandwiches. The secret of the original recipe is the weight of the eggs in their shells which should be same as the weight of the butter, sugar, and flour to be used.

Notes

Tips:Β  For best results, I recommend using a digital kitchen scale to weigh the flour and otherΒ ingredients. But if you don’t have a scale, then fluff your flour with a spoon and then spoon it into your cups before leveling it off with a flat spatula.
Β
Do not overmix the batter as the cake will come out dense. Gently fold in the dry ingredients with a spatula or mix at low speed only for a few seconds.
Β
Always tap the cake pan on the counter a few times to remove any air bubbles and level out the batter in the pan for an even bake.
Β
Don’t skip sifting the dry ingredients. It ensures a smooth crumb always.
