Oatmeal Dates Banana Chocolate Cake

Ingredients

  • 1/2 Cup | 10 small size dates 78g, pitted & chopped
  • 1 Cup 240g Hot Milk
  • 1 7 inch Overripe Banana 112g
  • 1 large Egg room temp
  • 1/2 Teaspoon Vanilla Essence
  • 1 Cup 80g Rolled Oats, blend to flour
  • 2 Tablespoon 10g Dark Cocoa powder
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda
  • Pinch of Salt
  • Dark Chocolate chips for topping Optional

Instructions

  • Deseed and Chop the Dates. Pour Hot Milk and let it rest for 30 Mins covered. If your dates are already very soft then you can skip this step.
  • After resting, the dates will soften up. Add one ripe banana and blend together till smooth.
  • Transfer the Puree to a Mixing Bowl. Add one Egg and Vanilla Essence. Mix Well.
  • Weigh the Old fashioned Rolled Oats for precise results and blend until they turn into fine, powdery flour. Add it to the bowl.
  • Sift in the Cocoa powder and mix. Cover let the batter rest for 15 Mins. Meanwhile prepare the baking pan by greasing with oil then place a parchment paper with long edges.
  • After 15 Mins, the batter becomes thick. Oats will absorb some of the milk. This helps in better digestion and locks in moisture.
  • Sift in the Baking Powder, Soda and pinch of Salt. Fold them in gently. Baking Powder often tends to have lumps so its always best to sift it before using.
  • Bake @180C for 35-40mins or till a toothpick test comes clean. Let it rest covered for 20-25 Mins before removing from the Pan. Slice and Serve.

Notes

Always use Old Fashioned Rolled Oats instead of the Quick Instant Oats as Rolled oats are healthier than quick oats because they are less processed, digest more slowly, and have a lower glycemic index. Rolled oats (old-fashioned oats) are steamed and flattened into thick flakes. Quick oats are steamed longer and rolled thinner (or chopped into smaller pieces) so they cook faster. Because rolled oats break down more slowly in the digestive tract, they keep you full for a longer time.
