Chicken Bhuna (or Bhuna Chicken) Masala is an aromatic dry chicken dish, where the chicken is sautéed with a lot of caramelized onions, tomatoes, yogurt and spices until all the masala clings onto the chicken. Best served with Paratha/Naan/Roti though pairs well with any rice dishes as well.

Chicken Bhuna Masala
Ingredients
FOR CHICKEN FRY
- Chicken 700gms, Curry Cut
- Salt to taste
- 1/2 Teaspoon Turmeric powder
- 1 Teaspoon Coriander powder
- 1 Teaspoon Kashmiri chilli powder
- 1 Tablespoon Lemon juice
- 1 Tablespoon Mustard Oil
- 1 Tablespoon Mustard Oil (To Fry)
FOR CHICKEN BHUNA
- 3-4 Tablespoon Mustard Oil
- 350gms, 4 Medium Sized Onions
- 1 Tablespoon Ginger Garlic Paste
- 2 Tomatoes Pureed (150gms total)
- Salt to taste, 1/2 Teaspoon Sugar
- 3/4 Cup | 200gms Thick Curd/Yogurt
- 1/2 Teaspoon Turmeric powder
- 1 Tablespoon Coriander powder
- 1 Tablespoon Chicken Masala
- 1 Teaspoon Kashmiri Chili powder
- 1 Teaspoon Red Chili powder
- 1 Teaspoon Garam Masala
- 1 Teaspoon Kasuri Methi crushed
- 2-3 Sliced Green Chillies
- Chopped Coriander leaves along with Stems
Instructions
- Marinate the Chicken pieces with salt, turmeric, coriander, chili powder, lemon juice and mustard oil. Keep aside for 20-30mins.
- Fry the marinated chicken in oil/ghee in medium heat for 10-12mins. Keep aside along with any stock from it.
