Chicken Bhuna (or Bhuna Chicken) Masala is an aromatic dry chicken dish, where the chicken is sautéed with a lot of  caramelized onions, tomatoes, yogurt and spices until all the masala clings onto the chicken. Best served with Paratha/Naan/Roti though pairs well with any rice dishes as well.

Chicken Bhuna Masala

Ingredients

FOR CHICKEN FRY

  • Chicken 700gms, Curry Cut
  • Salt to taste
  • 1/2 Teaspoon Turmeric powder
  • 1 Teaspoon Coriander powder
  • 1 Teaspoon Kashmiri chilli powder
  • 1 Tablespoon Lemon juice
  • 1 Tablespoon Mustard Oil 
  • 1 Tablespoon Mustard Oil (To Fry)

FOR CHICKEN BHUNA

  • 3-4 Tablespoon Mustard Oil
  • 350gms, 4 Medium Sized Onions
  • 1 Tablespoon Ginger Garlic Paste
  • 2 Tomatoes Pureed (150gms total)
  • Salt to taste, 1/2 Teaspoon Sugar
  • 3/4 Cup | 200gms Thick Curd/Yogurt
  • 1/2 Teaspoon Turmeric powder
  • 1 Tablespoon Coriander powder
  • 1 Tablespoon Chicken Masala
  • 1 Teaspoon Kashmiri Chili powder
  • 1 Teaspoon Red Chili powder
  • 1 Teaspoon Garam Masala
  • 1 Teaspoon Kasuri Methi crushed
  • 2-3 Sliced Green Chillies
  • Chopped Coriander leaves along with Stems

Instructions

  • Marinate the Chicken pieces with salt, turmeric, coriander, chili powder, lemon juice and mustard oil. Keep aside for 20-30mins.
  • Fry the marinated chicken in oil/ghee in medium heat for 10-12mins. Keep aside along with any stock from it.
