Quick & Easy to make Spaghetti Recipe made with Chicken Sausages and Minced Chicken in a Scrumptious Tomato based red sauce with ingredients easily available at home.
Note that the Traditional way to make Bolognese is to use minced Beef and Bacon along with red wine. This recipe uses minced Chicken breast along with Chicken Sausages instead. The Sausages are optional but tastes fabulous with this recipe inspired by Jollibee’s Popular Filipino-style spaghetti dish.

Chicken Spaghetti Bolognese
Ingredients
- 2 Tablespoon Olive oil
- 5 Tablespoon Finely Chopped Onion
- 2-3 Tablespoon Chopped Carrot
- 3 Big Garlic Cloves minced
- 2 Chicken Sausages, sliced (Optional)
- 250g minced Chicken
- 2 Tablespoon Tomato Paste
- 2 Big Tomatoes, roughly sliced
- 1/2 Teaspoon Salt
- 1 Teaspoon Sugar
- 1 Chicken Stock Cube, crumbled
- 1/2 Teaspoon dried Oregano
- 1/2 Teaspoon dried Thyme
- 1/2 Teaspoon Paprika
- 1/2 Teaspoon Black Pepper
- Reserved 1/2 Cup of the Pasta Water
- 1-2 Tablespoon Parmesan Cheese, Grated
- 250g cooked spaghetti
To Cook Spaghetti till Al Dente (5 mins)
- 5 Cups of Hot Boiling Water
- 1 Teaspoon Salt
- 1 Teaspoon Olive Oil
- 250g dried Spaghetti(I used Barilla)
To Garnish
- Grated Parmesan Cheese
- Parsley
Instructions
- Bring Water to a Boiling Point first. Add Salt & Olive Oil. Once starts boiling add Dried Spaghetti. Once the spaghetti strings are fully immersed in the hot water, Cook on High Heat for 5 mins or according to your package instructions till Al Dente. Al Dente means slightly firm not too soft or mushy but cooked. I usually set a timer in my phone. Reserve half a cup of the pasta water and drain the spaghetti.
- Saute finely chopped onions and carrots in olive oil. Add minced Garlic. Saute few seconds.
- Add sliced Sausages and minced Chicken. Cook on high heat stirring continuously for 5-10 mins. Add Tomato paste and roughly sliced Tomatoes. Add sugar and salt. Cover cook on low heat for 10 mins till the Tomatoes soften.
- Once Tomatoes soften, mash them remove the skins with Tongs, optional. Add oregano, thyme, black Pepper and paprika. Add pasta water and simmer for some time. Garnish with parmesan cheese and Parsley or basil leaves.
- Serve hot over the cooked spaghetti. Bon Appetit π½οΈ π₯°
