Easy Chicken Curry
Ingredients
TO MARINATE( for at leastΒ 20 Mins)
- 1/4 Cup Yogurt/Curd
- 1 Teaspoon Salt
- 1/2 Teaspoon Turmeric
- 1 Teaspoon Coriander Powder
- 1/2 Teaspoon Cumin Powder
- 1 Teaspoon Kashmiri Chili Powder
- 1/2 Teaspoon Red Chili Powder
- 1 Teaspoon Chicken Masala
- 1 Teaspoon Lemon Juice
- 500g Chicken, Curry Cut
FOR PUREE
- 2 Tomatoes
- Half of a Onion
- 8 Small Garlic Cloves
- 1/2 Inch Ginger
- 3 Green Chilies
For Fried Potatoes
- 2 – Medium Potatoes
- Pinch of Salt & Turmeric
- 1 Tablespoon Mustard Oil, To Fry
FOR GRAVY
- 3 Tablespoon – Mustard Oil
- 2 – Small Bay Leaves
- 3 Cloves, 3 Cardamom, Cinnamon, 10 Black Peppercorns
- 2 – Medium Onions, Sliced Thinly
- The Tomato Puree
- Salt to taste
- 1/2 Teaspoon – Sugar
- 1/4 Teaspoon – Garam Masala
- 1 Tablespoon – Ghee
- 3 – Green Chilies
- Chopped Coriander Leaves
Instructions
- Whisk Yogurt till no lumps. Add Salt, Turmeric, Coriander, Cumin, Red Chili, Kashmiri Chili and Chicken Masala. Add Lemon Juice. Mix Everything Well. Add Chicken pieces and Mix.Let it rest at least for 20 mins.
- Make a Puree of Tomatoes, Onion, Green Chilies, Ginger and Garlic.
- Saute Potatoes in oil till Golden Brown on Medium Heat. Set them Aside.
- Saute Whole spices like Bay leaf, cloves, cardamom, cinnamon and Black Peppercorns in Oil. Add thinly sliced Onions, fry till Golden Brown. Add the Tomato Puree and Salt, sugar. Add Water and Cover cook for 15-20 Mins.
- Once Cooked, Add Garam Masala, Ghee, Green Chilies and chopped Coriander Leaves.
- Serve Hot with Steamed Basmati Rice. Bon Appetit!
