Gulab Jamun Cake
Ingredients
- 1 Cup 100g Milk Powder, full cream best
- 3/4 Cup 90g All Purpose Flour/Maida
- 3/4 Teaspoon Baking Powder
- 3/4 Teaspoon Baking Soda
- Pinch Salt
- 1/2 Teaspoon Cardamom powder
- 1/4 Cup 48g Pure Ghee
- 1/2 Cup 50g Powdered/Icing sugar
- 1/2 Cup 120g plain Yogurt/Curd
- 1/4 Cup Milk room temperature
Sugar Syrup
- 1 Cup 200g Sugar
- 1 Cup 240g Water
- Pinch of Saffron strands
- Pinch Cardamom Powder
- 1/2 Tsp Rose Essence
Instructions
- Sift together the Milk Powder, All Purpose Flour, Baking Powder, Soda and Salt in a mixing bowl. Add Cardamom/Elaichi Powder. Mix well to distribute the leavening agents evenly.
- In another bowl, mix together Ghee, Powdered sugar and whisked yogurt till smooth. Add the Dry Ingredients in small batches mixing well. Add milk to get a smooth flowing batter.
- Transfer to a greased glass pan. Bake @170C for 30-35mins. Took 35mins for a clean toothpick. Time may vary depending on the material or size of your pan so always check with a toothpick after 25mins.
- Once baked, poke holes on the surface of the cake and pour the sugar syrup. I used only 2 parts of it and kept one part to serve after slicing.
- Once Syrup is absorbed, decorate with edible Silver Vark optional and chopped pistachios. Slice into squares and serve with sugar syrup.
