Penne Pasta bites mixed with Broccoli and Carrots, Bell Pepper dunked in a rich creamy cheesy white sauce flavored mildly with dried Oregano and pinch of Nutmeg, bit of Black pepper to balance the creaminess and Grated Parmesan Cheese for that Cheesy taste.

White Sauce Pasta
Ingredients
To Cook Dried Pasta till Al Dente(11 Mins)
- 5 Cups Boiling Water
- 1 1/2 Cups Dried Pasta (I used Barilla Penne Rigate)
- 1/2 Teaspoon Salt
- Olive Oil, to Drizzle once Strained
To Fry Veggies
- 1 Tablespoon Olive oil
- Veggies ( blanched brocolli, carrots red & green bell peppers)
- Salt & Pepper
FOR The SAUCE
- 2 Tablespoon 28g Butter
- 1 Tablespoon Olive oil
- 1 Teaspoon minced Garlic, optional
- 2.5 Tablespoon 20g All Purpose Flour
- 1 Cup warm Milk, to be added in batches
- 1/2 Cup Heavy Cream
- 4-5 Tablespoon Pasta stock
- 3-4 Tablespoon 25g Parmesan/Cheddar Cheese
- Salt & Black pepper
- 1/2 Teaspoon Dried Oregano
- 1/4 Teaspoon Nutmeg powder
- Sauteed veggies(red bell pepper, broccoli, boiled corn, carrots )
- Boiled pasta
- Chopped parsley & red chilli flakes, to garnish
Instructions
- Bring enough water in a pot, around 5 Cups to a Roaring Boiling point on High Heat. Mix Salt. Add the Dried Pasta, cook 10-11 mins or till al dente (cooked but still firm) on medium High heat. Follow package instructions as depends on the pasta type used. I used Penne Rigate. Do not Overcook. Drain them once cooked and reserve half cup of the pasta water. Apply Olive oil to prevent sticking to each other.
- Saute Minced Garlic in Olive oil. Add cubed veggies of your choice,l used carrots, red and green bell peppers. Blanch Brocolli for 2-3 mins in hot water and saute for 2-3 mins. Do not overcook. They should have a bit of a crunch.
- Cook bit of All Purpose Flour in olive oil and Butter for a minute till no lumps. Do not brown. Add warm milk bit by bit whisking it till smooth . Cook on low heat till thickens slightly.
- Add heavy cream, and mix well. Add salt, Dried Oregano, Black Pepper and Nutmeg powder. Add Grated Parmesan Cheese.
- Add the reserved Pasta water, the boiled Pasta and the veggies. Garnish with parsley and red chili Flakes. Bon Appetit π½οΈ π₯°
