I like how moist and wonderful this banana cake turns out in spite of the simplicity of making the recipe. I am a fan of Butter Cakes and being able to use melted butter in this not only takes the taste of the cake to an another level, it also makes the process quite easier. You dont have the hassle to keep the butter at room temperature nor do you need to cream with the sugar first. I just take out the butter straight from the refrigerator, cut them into cubes and weigh in grams before melting it for 50-60 secs in the microwave. Allow it to cool down though else it might cook the eggs.

Chocolate Chip Banana Cake

Ingredients

  • 1 1/2 Cup ripe Bananas sliced (3 medium bananas, around 370g total skin on)
  • 1/4 Cup | 50g Soft Brown Sugar
  • 1/4 Cup | 50g White Sugar
  • 1/2 Cup | 115g unsalted Butter, melted
  • 2 Large Eggs, room temperature (55-64g recommended)
  • 1 1/2 Teaspoon Vanilla Essence
  • 1/2 Cup | 125g Greek / Plain Yogurt, room temperature
  • 1 1/2 Cup | 187g All Purpose Flour
  • 1 Teaspoon | 6g Baking Soda
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Cinnamon powder (optional)
  • 3/4 Cup | 140g mini chocolate chips ( reserve 1/4 of it for topping)

Instructions

  • Mash Ripe Bananas in a bowl. Add the Brown and White Sugars. Melt Butter, allow to cool and add it. Add the Eggs and Vanilla Essence. Mix well. Using an electric beater helps in blending everything well.
  • Add the Yogurt and mix. If you don't have Yogurt, you can use 1/4 Cup Milk and 1/2 Tablespoon White Vinegar instead.
  • Place a Sieve on top and sift together the All Purpose Flour, Baking Soda, Salt and Cinnamon powder in two batches. Fold the dry ingredients Gently into the wet ingredients.
  • Fold in the Chocolate chips. Reserve some for topping.
  • Bake @180C in a Preheated Oven for 45-50mins in a 9 inch loaf pan. Grease and Line the pan with parchment paper with long edges. Baking time will vary based on the tin size or shape used. Allow to cool in the pan for 15-20 mins.
